RECIPE INGREDIENTS:
1 cup spinach
2 8 inch whole wheat tortilla, 96% fat-free
3 oz black bean spread [recipe follows]
3 tablespoons yellow, onion dice
2 tablespoons fresh garlic, chopped
¾ teaspoon chili powder
3 tablespoons water
¼ teaspoon chipotle pepper
2 cups canned black beans, drained and rinsed
¼ teaspoon dried oregano
¼ teaspoon ground cumin
1/8 teaspoon smoked paprika
1 serving of the southwest scramble recipe [recipe follows]
1 whole eggs
1/4 teaspoon chipotle powder
1/2 cup egg substitute
1/2 teaspoon cilantro, chopped
1 serving of fresh tomato salsa [recipe follows]
3 tablespoons red onions, small dice
1 tablespoon cilantro, chopped
1 medium tomato, diced
1 tablespoon jalapeno, seeded and minced
1 tablespoon fresh lime
1/16 teaspoon kosher salt
INSTRUCTIONS:
Place the whole wheat tortilla on a flat surface, off center place 3 oz of the black bean spread follow with half of southwest scramble, fresh tomato salsa and the greens of your choice. Fold tortilla into a burrito. Repeat procedure and serve.
