1 pound broccoli florets, 1/2 cup red onion, chopped, 1/2 cup dried cranberries or raisins, 1/2 cup sunflower seeds, 1/4 cup sesame tahini, 2 tablespoons lime juice, 1 tablespoon red wine vinegar, 1 tablespoon pure maple syrup, 3/4 teaspoon sea salt, To Taste freshly ground black pepper, As needed, water
Preparation Cut the broccoli into bite-sized pieces then toss in a medium mixing bowl with onions and dried cranberries or raisins. In a small bowl, whisk together the tahini, lime juice, vinegar, maple syrup, salt and pepper. Slowly add 1 tablespoon of water at a time until you reach a consistency that’s thin enough to pour, yet still thick and creamy enough to coat the broccoli. Toss broccoli salad with dressing. Sprinkle with sunflower seeds when ready to serve.
