4 cups very finely chopped curly leaf kale, 1 Honeycrisp apple, cored and cut into 1/4-inch dice, 1/3 cup finely chopped red onion, 1/2 cup shredded cheddar cheese, 2 tablespoons slivered almonds, 1/3 cup extra virgin olive oil, 2 tablespoons apple cider vinegar, 2 tablespoons pure maple syrup, 1 tablespoon Dijon mustard, 1 garlic clove, finely minced, 1/2 teaspoon salt, 1/4 teaspoon pepper
Preparation In a large bowl, combine the kale, apple, red onion, cheddar, and almonds. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon, garlic, salt and pepper. Drizzle dressing over salad 30 minutes before ready to serve.
