1 cup Fresh pineapple, finely chopped, 1 can Black beans, drained and rinsed, 1 cup Frozen corn kernels, thawed, 1 Red or orange bell pepper, diced, 2-4 tablespoons Red onion, chopped, 1 Jalapeno, seeded and chopped, 1/4 cup Lime juice, 1/4 cup Fresh cilantro, chopped, 1/2 teaspoon Ground cumin, to taste Salt and pepper
Preparation In a large bowl, toss together pineapple, corn kernels, bell pepper, onion, jalapeno, lime juice, cilantro and cumin. Add salt and pepper to taste and additional lime juice, if desired. Cover and chill in the refrigerator until ready to serve.
