Recipe for Havana Mojito Chicken with Hot Pepper and Lime Dressing

Recipe Ingredients

8 (4 oz.) chicken breasts, 1 medium yellow onion, chopped, 1 tablespoon lime zest, 1 teaspoon brown sugar, 1/4 cup lime juice, 1 tablespoon fresh garlic, chopped, 3 tablespoons fresh mint, chopped, 1/4 teaspoon Spanish paprika, 1 jalapeno, seeded and chopped

Cooking Instructions

Follow the prep technique next to each ingredient.   Preheat oven to 350˚F.   In a food processor combine the ingredients except the chicken and blend well. Pour over chicken and marinade for at least 2 hours. On a sprayed sheet pan, roast the chicken for 15 minutes or until its internal temperature reaches 165˚F.
