Recipe Ingredients

9 (4 oz.) chicken breasts, 2 garlic cloves, peeled, 1/4 cup fresh cilantro, chopped, 1/2 teaspoon kosher salt, 1/8 teaspoon cayenne pepper, 1 1/2 teaspoons paprika, 1 1/2 teaspoons ground cumin, 2 tablespoons olive oil, 2 tablespoons fresh parsley, chopped, 1 bunch scallions, chopped

Cooking Instructions

Follow the prep technique next to each ingredient.  Preheat oven to 350˚F. Prepare pan with nonstick cooking oil.  Combine the scallions, garlic, cilantro, parsley, salt, paprika, cayenne, cumin and olive oil in food processor and mince. Pat dry the chicken breasts and place in a bowl. Fold in the condiment mixture. Let stand at least 1 hour. Roast chicken on a prepared sheet pan for 12 to 15 minutes or until it reaches an internal temperature of 165 degrees.
